- 1 cup fresh coconut, shredded
- 100g thinly sliced Fruit for Life Dried Apricots
- 125g butter, soft
- ¼ cup golden syrup
- ½ tspn bicarb soda
- 1½ cups rolled oats
- ½ cup brown sugar
- ¾ cup plain flour
Preheat oven 160°C. Melt butter in a pan over a medium heat, mix golden syrup through and take off heat.
Add bicarb soda – it will bubble.
Combine coconut, apricots, oats, flour and sugar in a mixing bowl.
Then add syrup and mix together. Place in a 20cm slice tin.
Press down with back of spoon to flatten.
Bake for 20 minutes.
Cool then turn out and slice.
